Feijão Guizado: Bean Stew

This is a pretty typical Portuguese Bean Stew.  It's so simple, but so delicious and is one of my favorites.  The Peruvian beans are amazing and worth looking for if you can find them.  If you know my mom, ask her for some because she always has a huge bag in her pantry.



Recipe:
Soak Peruvian white beans or other beans in a bowl with water overnight.

Cook beans with ½ an onion, 1 clove garlic, salt, and splash of olive oil about 40 minutes until not quite cooked all the way

Separate pan, sauté linguica or bacon. Then, add 1 chopped onion and some olive oil and sauté. Add 1 Tbspn of tomato paste or 1 tsp paprika.

Preheat oven to 250.

Start adding beans to sauté pan mixture and as much bean cooking water as needed. Bring to a boil.

Bake in pyrex for 45 minutes or longer covered.  Enjoy with some good bread for a healthy and satisfying meal.
